Ingredients
  

  • 3 tbsp. olive oil
  • 3 celery ribs cut into slices
  • 3 carrots peeled and cut into slices
  • 1 small yellow onion diced
  • ½ cup red bell pepper diced
  • pounds chicken breast
  • 4 garlic cloves minced
  • 1 russet potato cut into ½ inch cubes
  • 1 can petite diced tomatoes 14.5 ounces
  • 2 tbsp. fresh chopped parsley
  • 1 tablespoon dried oregano
  • ½ teaspoon red pepper flakes optional for heat
  • ½ teaspoon black pepper
  • 1 tablespoon salt
  • 4 cups water
  • 4 cups chicken broth
  • cups ditalini pasta

Instructions
 

  • Heat a large pot over medium heat and add in the olive oil. Once the oil is hot, toss in the sliced celery, carrots, diced onion, and bell pepper. Sauté these vegetables for about 10 minutes, stirring occasionally, until they just begin to soften and release their natural sweetness.
  • Next, add in the chicken breasts, minced garlic, cubed potatoes, canned tomatoes, fresh parsley, oregano, red pepper flakes (if using), black pepper, salt, water, and chicken broth. Bring the mixture to a full boil for about 1 minute.
  • Once boiling, reduce the heat to low, cover the pot, and let it simmer for 45 minutes. This slow simmering process allows the flavors to meld together beautifully while the chicken becomes tender.
  • After 45 minutes of simmering, use tongs or a slotted spoon to carefully remove the chicken breasts from the pot. Let them cool slightly before shredding them with two forks. Once shredded, return the chicken to the pot and stir it into the broth.
  • Increase the heat and bring the soup back to a full boil. Add the ditalini pasta and cook for the recommended time on the package, typically around 10 minutes. Stir occasionally to prevent the pasta from sticking to the bottom.
  • Once the pasta is perfectly cooked, your Sicilian Chicken Soup is ready to serve! Garnish each bowl with extra fresh parsley for a pop of color and freshness. For an added touch, pair the soup with crusty bread or homemade focaccia for dipping.
